When you're done eating get some warm water and add a bunch of salt to it, then just kind of rinse it around.
You're actually going to want to get used to doing this after you eat for a while, because even when its healed over you're going to have pits in your mouth while your gums build up to cover the now empty socket where the tooth was and you're going to get food stuck in them.
As for how often, just use your judgement. Does the wad feel all nasty and full of spit and blood? Go ahead and change it out. Just don't be a fussy bitch. Also, when you change the gauze, let it air out for a bit, give it a chance to bleed and clot up in the places where its still raw. Then add some fresh new gauze after a bit. You should notice less and less blood on it each time. Once its just some spotting you should be fine.
Seriously, don't worry about it, just call your dentist in the morning if you're still worried about it.
