At what point in history did humans find out they could launch satellites in orbit that would not fall down immediately. i.e. that if they spun them around the earth for fast enough they could keep rotating and "stay" up there for a long time?

That was discovered long before people were able to actually do it. Because they had ideas about how gravity worked already. Newton already theorized about such a thing long before the artificial satellite.

Once people understood gravity it made sense that it was possible.

no and such ideas continued well into the 1940s, with various films about space travel assuming the moon had an earth-like atmosphere. This continued as late as the 1950s in regards to mars
