Engines play shit so crazy humans scratch their heads trying to figure out why they just sac'd their queen for a useless pawn, but the engine is thinking about chess in a way that isn't even remotely similar to how human brains process the game. The engines are at such a high level that if you tried to play an entire game like AlphaZero either your opponent would go off theory instantly (meaning it's a regular game of chess now and you both have to analyze for yourselves) or you would lose because you would try to do the crazy moves the engines do but wouldn't be able to follow it up. TL;DR engines play super advanced chess, and we can only use some of the novelties they play because most go over our monkey brains. But we do use them to find new ideas because they are great tools and have done wonders for the theory of the game.
