wtf do these sticks mean?

i tried to google it but i found to many different things but nothing that really answers my question

how is | x + 7 | - 2x different from just x + 7 - 2x?

it means absolute value or magnitude. for real numbers |x| = x for x>=0 and |x| = -x for x<0
