The analogy I prefer using is that Sex is Hardware while Gender is Software. The Hardware does *basically* come in 2 standard packages, but the Software can have all sorts of variations.

What is now called 'gender' used to be called 'sexual preference' and/or 'gender dysphoria' possibly accompanied by various disorders eg Turner syndrome, XXX, Klinefelter Syndrome, XYY Males, Hermaphroditism etc. Today there are 221 genders - though by the time you read this there could be more.

We could, for example, call the gender of such a person "non-binary".

MOST humans have two eyes, there are VERY few that differ from this. So it would be OK to say humans have two eyes.

Most humans can easily be divided into two genders, there are a FEW that are ambiguous. It OK to say humans have two genders.

It's a poor analogy. Our hardware determines out software to a very large degree, the two are not as independent as you're suggesting. There's a reason why there is a significant commonality in "masculine" and "feminine" traits and norms throughout pretty well all cultures in human history. Gender is not just some arbitrary social construct, it has a solid basis in our biology.
