Using heated, dried air oes result in a greater loss of nutrients but for the energy saving of the method I plan there is a price advantage and instead of getting a tiny serving you could consume much more of the dried product.
Dried food weighs less, takes up less volume and there are carbon savings in transportation. I'm not even going to go too far into shelf life advantages and less wastage. Imagine transporting tons of fruit overseas only for a large portion to be discarded adter fa few weeks.
You think that fruit you are eating is ripe? It has been picked unripe, losing nutritional value as a result for the sake of extending the shelf life. This is before we approach chemicals which are applied to the trees and fruit, once again to extend shelf life.
In such a low carbon emission production and supply chain it is much easier to offset carbon emissions. So much so that purchasing the product can result in net carbon storage instead of net carbon production. This is what carbon negative means.

Too many people take too little interest in their food, their health and everything that is not related to consumerism and advertising. Thee must be a top down approach to managing the environmental effects of ignorant consumerism and this is contrary to the best interests of big companies. They want lots of stupid people to buy their products withoit realising how unhealthy and destructive they are.
Ignorant parents are raising poisoned and ignorant children and the cycle perpetuates.
