They are anon. There's this worm that lives in the guts of dolphins, it's eggs are found in fish. When ingested by humans the worm gets confused and burrows into your intestinal lining and dies, your immune system goes apeshit and basically forms a tumor. Japanese have 10x the amount of cases of this every year compared to the US, just imagine the number of other parasites in them.

Sushi and sashimi with fish is not raw. It is "prepared". Specifically, the fish is frozen at a very cold temperature for at least a day. This destroys nematodes and makes the meat much safer to consume without cooking. People who get worms from eating raw fish are generally retards making it at home from fillets they bought at the store. Restaurant fish used in sushi and sashimi dishes is scrutinized far more, and what you buy at the store is unlikely to have been frozen at a cold enough temperature to kill worms.

not in Japan, when the restaurant is anywhere near the water/pasture, they proud themselves by serving fish/meat that is never frozen.

Food that is handled properly is unlikely to be infected. Most contamination occurs when being processed, not in the animal itself. The Japanese even eat raw chicken, but they cut away the exterior of the meat to reduce risk.

Also, their tendency to eat whale meat have brought upon themselves many cases of mercury poisoning

Their sushi are farm raised only to avoid phatogens and mercury. Also, freezing it fast kills bacteria.
