How can we define movement and position if we don't even know the boundaries of the universe? Is speed always relative?

Ok right I heard about that. But is it velocity relative to the light source or absolute velocity?
From your answer I assume it is the former, so do we know how our part of the universe is moving without knowing any fixed, non moving points just because of light?

Speed, not velocity. Velocity changes from a simple mirror, speed never changes from any perspective. Because light is the same in all reference frames, it gives us absolutely no absolute information about our, or any other, reference frame.

Yes. Use rapidity instead, that's the natural metric for "movement" in hyperbolic spaces.
