usually the photosphere is considered as the surface, so just the point where 50% of the light will escape from the star without being scattered
the bigger you go the more vague it becomes though, red giants and shit are so puffy and irregular you can't really define a good surface

Why not just say where the center of it ism The should be pretty easy.

No need to deal with "where it ends" unless it is for a specific context.
