Majority of things in the galaxy which were bound to collapse together through gravity have already done so.
There is the odd nova/supernova disrupting the distribution of mass in the neighborhood, but that's like throwing firecackers into the ocean.
Everything with a "stable" orbit has enough velocity to fall past the thing that's pulling it.
Earth "falls" sideways so fast it's actually harder to shoot yourself into the sun that to leave solar system.
