that looks like a cup of "beondegi" people sell it in festivals
it is a biproduct from a process of getting silk from silk moths.
as for hygiene, it is pretty clean because silking facilities have a high standard for sanitation. of course you have to account that it is a street food.
nutritions? nah, nobody eats that for a meal, it's just a snack. but it could be a great alternative maybe. it does not cost much cause it's a biproduct.
environmentally speaking, that is pretty environment friendly. As i said, it is a biproduct. otherwise they would all go to waste
would i eat it? no, it isn't so tasty, i wouldn't recommend this to foreigners, but considering all the shitty foods made from bugs, it is one of the best in my opinion.
