Scientifically-minded people often talk about the rigour of the scientific method as evidence of its superiority. They give examples like boiling water. If, under the exact same conditions, we boil water and one single time it doesn't boil at 100 degrees C, they say, then science would throw out its assertion about the boiling point of water.

But this never happens in science. Whenever something seriously undermines an established theory, that theory isn't thrown out, rather it is propped up by some new theoretical construct.

Take dark matter for example. It's simply an invention that would help explain why reality doesn't match the model of reality that physicists have. Scientists have been looking for dark matter for literally decades and have never observed it. But they still accept it rather than admit that their models are wrong. They even talk about dark matter matter-of-factly, as though its existence is certain.

Frankly it's kind of embarrassing that scientists refuse to admit that their models are wrong. That honesty wouldn't even invalidate them as the best models we have.
