hypothetically if a race was able to move around large asteroids/planets could they extend the life of their sun by dumping gas giants into it?

Depends on if the gas giants would sink to the core where fusion happens or not, I don't know much about stellar convection, but I know that having extra fuel is useless if the fuel isn't anywhere near the reaction.

Making a star bigger causes it to expend its fuel more quickly, so that would be a pretty bad plan. Not that there's enough mass fraction in any given system's gas planets to make much difference in the first place, though.

It's worse than "useless" if the goal is to extend the lifetime of the star, because it increases the mass of the star and therefore the pressure in the fusion region, which makes the reaction happen more quickly.
