>Analysis
As an engineer first, analysis was my first look into formal mathematics at a high level, the mind boggling concepts and the sometimes insanely difficult but beautiful proofs made me feel like ive earned something. Moreover the overall thinking stats I gained made it into one of the most if not the most valuable set of classes ive taken.
>Discrete Time Signal processing
Probably the hardest class in my whole EE undergrad curriculum. Also the coolest, so many things come into play here its ridiculous. The study of fft algorithms was a god tier combo of compsci, math and engineering. Probably going to end up doing my phd in this field.
>Multivariate Data Analysis
A class that was the perfect mix between pure and applied math topics. Data analysis interwines concepts from probability theory, linear algebra and vector analysis seamlessly into a package were the relationship between those subjects seems so natural and fluid. This class was hard as balls, prof was a super hardcore phd in the area that had us do a shit ton of proofs and even review work that he was going to publish as a class project. This class was also pretty great in the sense that it trains you to be a top tier data scientist and that can net you some juicy jobs.
