1) Why does the integral (from 0 to +inf) of Probability in dv must be equal to 1?

2) Why do I have to multiply the probability density by the volume of the spherical cortex? Why did we choose the spherical cortex?

1) The integral from a to b is the probability of the speed of a particle having value between a and b. Since a particle is certain to have speed between 0 and infinity, (i.e. probability 1), the integral from 0 to infinity will be 1.
2) I am not sure what this question means, the cortex is a part of the brain.
3) It depends on how your quantities are defined? If heat is transferred to the gas at fixed volume and fixed temperature, the internal energy of the gas will increase and the entropy of the gas will increase. So I would usually not have a minus sign there as I would have U and S as the internal energy and entropy of the system. But different conventions may lead to a minus sign.

I think I now realise what you mean by question 2, when going from the Gaussian distribution of velocities to the Maxwell distribution of speeds? It is because the system is spherically symmetric, i.e the particles have no preference for direction, so it is convenient to use spherical coordinates to go from the distribution of velocties to the distribution of speeds, so you essentially multiply by a factor of 4*pi*v^2.
