All I’m saying is a lot of this bullshit is from the early 20th century and concepts like sources, sinks, and vortices are things you would see from when we were trying to figure out electromagnetism. There must be an easier way of doing this.

Navier-Stokes works, simulating it is what requires simplifying vortices to make the level of computation tractable.
We're not sure if Navier-Stokes exist everywhere and if solutions are always smooth, it's an open problem in mathematics.

The temperature in Navier stokes (or any
(non-) relativistic dissipative hydro theory) is not even real, but just a mathematical artifact that would exist if the fluid were in local thermodynamic equilibrium (which it by definition isn't).

Also we use hydrodynamics to predict outcomes of proton-proton collisions, but even joking. And it even works.

You should join us hydro people, stuff is wild.

It turns out that an effective theory of systems that tries to reduce a FUCKTON of degrees of freedom into just a handful of parameters is really, really, really hard to get right. Add in the fact that, as opposed to the solid case, you lose all notion of rigidity (i.e. static local density of your material), and you end up with a rather complicated theory... because the underlying physics that it is trying to model is even more complicated.

I had to Google that as well, since I mostly work with relativistic fluids. Seems to me as a higher-order pde that is closely connected to the notion of a harmonic function.
The Stokes paradox once again demonstrates that in hydro you have to be really careful about your assumptions to simplify the full nonlinear equations.
I'm still amazed how much we can get out of such a basic system of equations (conservation of energy-momentum and particle number) depending on the system we consider.
