Since a planet's atmosphere determines the color of the sky, does that mean planets with breathable atmosphere (for humans) will always blue skies?

It doesn't. Mars has a blue sky as well because rayleigh scattering, it only appears reddish because of the red dust suspended in the atmosphere.

The blue colour is caused by reighley scattering. It is not so much to do with composition of the atmosphere but its thickness/ other factors such as particulates and weather.

A planet with a thicker atmosphere would be suitable for humans as long as the amount of actual oxygen in it is the same.
