Why haven't we figured out yet how to create a, "redo button?" As in, time travel, but you can only travel within your own life and you become whatever age you were in the time you're traveling to and get transported to wherever you were then, but you keep all of your memories of the future?

In order to travel into the past you would have to rewind the entire universe, put every atom, every photon, back where it was in the past. Its literally impossible. No you don't, you tend to think that going back in time means going back up the linear line where you exist. What if going back in time lands you in a timeline where you were never born? I think going back to any timeline where you are alive is impossible because you are directly entangled with everything there, but go back 1000 years the entanglement is so weak that you would barely change anything by appearing out of nowhere.
