The fact that our established physics only accounts for a small portion of all of physics is not the point. We don't know everything, obviously. But what we do know is correct.
It's also important to recognize that when someone says a theory is correct, it refers to a very specific domain of applicability. Newtonian gravity is correct on Earth, and it will continue to be correct even if we were to suddenly figure out the dark matter puzzle tomorrow.
