Like the Hiest robot, rick is able to defeat it through another creation and able to make up a nonsensically layered plan to defeat a trope. Rick also augments himself. In other times, Rick just doesnt act intelligently. Like the episode with all the parasites, Rick doesnt realize that all the memories are positive AND rick doesnt make some sort of device to analyze creatures. He, and everyone else on the show, also doesnt notice you can wound someone and it kills a parasite. This happens in the show and they just sort of ignore it.
Finally, Rick has whatever amount of intelligence/memory is necessary to go through universes worth of society's and to utilize all of that information, but he is also unintelligent enough to be relatable to the average viewer. He doesnt ever have everything simulated in advance or whatever and is shown to forget things. Arguably purposeful that he chooses to act or become unintelligent but everything is arguable in the Cock and Cirty universe.
