The astronauts might not have seen them occasionally due to too much light from other sources (such as the lights inside their spacecraft).
>Why didn't they take a picture to show the stars?There are many instances of NASA publications containing stars. They don't show up in most Apollo imagery because there were many other things that were more interesting to take a photo of (such as the mission as it unfolds).
>Why would they take a picture of the earth?To show the Earth from the perspective of someone standing on another world. This is a view that very few people have seen for themselves, and a view most won't see in their lives even through photographs.
