The reason they put today's launch on hold was because there was too much lightning in the clouds above. It's rated for a certain amount of lightning dissipation, but the cloud today beat them on that.

NASA/SpaceX wants the launch to be completely perfect, otherwise any issues will turn safety minded retarded Boomer congressmen against the entire project
Also if the rocket failed and astronauts died mid launch, NASA would lose funding for human space flight for the next couple of decades

The main problem was if there was a emergency that would require the capsule to abort, the sea conditions would make recovery risky and dangerous.
