How does entropy in a deterministic universe increase?

Entropy, if you calculate it the "right" way by taking into account all the degrees of freedom of a system, is conserved by Hamiltonian dynamics (see Liouville's theorem). When you don't keep track of all of a system's degrees of freedom, then the entropy you calculate will tend to increase. And that doesn't depend on any 'arrow of time'.

Entropy isn't about computation though. Entropy is about what can be known about the system, predicting the final state of rule 30 is uncomputable, there's not a paradox, it explodes in entropy.
