I am an undergraduate moving into my senior year and am wondering how you even begin the process of writing a math paper? Do you just pick a topic and roll with it? How did you end up writing yours?

You should pick a topic that you are passionate about but choosing a topic based on your advisor's experience is not unheard of.
Your advisor will probably have a better idea of where interesting problems are in their field and can help you tackle said problems - in my humble opinion, it would still be best to determine a topic that you're interested in and pick a decent advisor in that field.

If you're having trouble choosing a topic then read mathematical literature until something interests you. If you can't find anything in pure mathematical literature, you may be able to find some interesting techniques or problems in other fields like physics or chemistry (or perhaps they'll provide motivation for a topic and you'll find that interesting).
