Because any point in this picture corresponds to one and only one x- and y value where the x-axis is IQ and the y-axis Perceived intelligence. Now the dots may or may not be arranged in such a way that may allow someone to deduce the conclusion that they may correlate with each other. They don't really correlate much in both pictures but there is still a quadratic interpolation of what would be if we assume that both would correlate. Now what is a quadratic interpolation? You may know the linear interpolation where you assume that some trait A (here perceived intelligence) depends on some other trait B (here IQ). You interpolate the data to get the best possible linear approximation which yields a function y = ax+b, where a and b are any number. A quadratic interpolation is the same, except that you desire to express y in terms of ax^2+bx+c, where a,b and c are any number.
