How does evolutionary theory explain asexuality?

So organisms develop fitness attributes that should allow them to reproduce. Yet, asexuality is a well-studied phenomenon where about 1% do not feel sexually attracted to anyone so they are unlikely to reproduce.

How do scientists cope with this?

There is a principle that the more a life form is complex, the more apparantly wastefull behavior will be observed.
The reason is that complex life form give rise to complex interspieces competition for resources, requiring even more complex mutations in order to survive.

Very vast misunderstanding of evolution on your part. All changes are random, the changes do not come about because they're beneficial, but certain changes are kept because they're beneficial or neutral. Asexuality is probably an example of genetic drift; a random mutation in the human behavioral repertoire.

Secondly, this is basically the same problem as homosex. They don't reproduce, either.

Thirdly, you don't have to be sexually attracted to someone to reproduce with them. You just need to have sex.

For example, statistically, self-identified lesbians are more likely than straight girls to get pregnant during high school. Lots of them seem to have sex with men, despite supposedly not being attracted to them. Why? I don't know - potentially it's could be prostitution, lying about being a lesbian for various reasons, rape, social pressure to conform, fluidity in sexual attraction, et cetera. Or other stuff.

It's about the survival of a gene, not an individual organism.

There are plenty of ways that taking personal risks will increase someone's chance of passing genes into the next generation. E.g. protecting your biological children, at the risk to your own life.
