but here is this idea I've been having for a while: if an evil power, like China, wants to unleash a plague on the world, why don't they just grab a natural pathogen and release it without any changes to hide their ass? As it obviously won't be detected as artificial.

I'm not advocating for conspiracy theories here but this is a problem that came to mind.
