Since gravity is weaker on the surface of Mars than on Earth, will plants grown in Mars greenhouses grow bigger/ taller than the same plants grown on Earth? If so, will this have some sort of genetic effect on Mars plants long term?

It could grow larger fruit since the plant doesn't have to support as much weight.
Your biggest problem with growing food on mars is that you can't just till the dirt and expect to harvest a crop, you'd need to do a lot of work amending it and turning it into soil. More likely you'd use hydroponics, which is still going to need a lot of chemicals and fresh water.
