To put it simply a Giant ass Congolese spider that is usually around 4-5 feet wide now if these things exist what organs or what ever the case may be to support that size?
And if these things really exist does it explain our arachnophobia?

A spider of that size would have to have a completely different anatomy, mainly a large and much more complex lung system and large surfaces for heat dispersion (like the dinosaur with the wing on the back). This spider would need a different musculature to move and would be extremely slow. Eight legs would be unnecessary and the exoskeleton and long legs would most likely not be enough to support the weight.

As the spider would increase in size it would be more and more different and at this size were looking at a very different organism. Another problem is the diet. How would this spider get enough calories to support its size?

Well op all I can say is maybe.
Maybe they exist maybe they dont.
Because the natives were scared shitless of these things they rather take longer routes rather than the shorter one to get caught by one of these things.
How ever if they exist they probably have a different system of lungs and body that we probably aren't aware of yet but I doubt the natives make this shit up for the hell of it, their is a reason why thy built the huts like they do.
It could also be a new species who knows until someone decides to fully explore the congo with a live camera.

Apparently this type of spider according to the natives use burrows to sneak attack its prey or use webs which is usually in the borrow, or use the webs from trees to trees to trap itd prey if it does attack something is usually smaller prey or sometimes even children.

Physics. Spiders exist in three dimensions which means if you increase their size, their weight increases in a cubic manner instead of linearly. The strength must also increase in a cubic manner but that doesn't happen. It increases linearly. So there's a point at which a spider (or other insect) grows where it cannot support its own weight.

I often hear this as an argument for why many animals were larger in the past, but I'm not sure if it is really relevant in this case.
The argument is, as I understand it, that more oxygen implies more energy, and more energy implies a larger maximum body size.
While this is rational, I do not see why this implies that large fauna cannot exist in modern atmospheric conditions.
Why could a more efficient respiratory system not evolve to make up for it?
Moreover, how can we know how much energy an animal would need at a given size if we don't even know anything about the animals behavior?

There are arthropods in the fossil records which reached astounding sizes, and yet the neither gravity nor the square-cube law have changed, meaning these ancient arthropods could support their own weight (not necessarily the ridiculous 6 food claim though).

the big ones were around when oxygen in the atmosphere was about 33%
it's about 23% now
there's also some bigger ones in the water, which has a fair bit of dissolved O2, but they aren't as much fun as sharks

Essay back in the day when earth was a lot more oxygen rich there were giant fuck off insects roaming around. Human sized dragonflies and shit like that.
A dog sized spider seens entirely probable under those conditions, however there may be some part of the spiders anatomy that I dont know about that prevents it being big.

Sea dwelling animals don't count since size doesn't matter much in water. Blue whale is the largest animal to ever exist (besides ur mum) because you can grow as large as you want in water and still move just fine.
