according to relativity the whole reason a length of a second may vary is because the speed of light remains constant.

basically if someones travelling at 1/3 the speed of light, time for them will be 3 times as slow so that a photon still travels at the speed of light from their perspective.

The speed of time is very much both a philosophical and a subject of natural science. I, personally, choose to view it from a highly relative philosophical perspective and argue that time is going at the speed of the observer's cognition.

Connecting it to natural science, one could also say it's moving at the speed of which atoms and elemental particles travel. For example, many agree that time has completely stopped when nothing is moving, because nobody is there to observe it(since the brain has stopped working as well). If nobody is there to witness that time indeed has passed, for example not being able to in any way acknowledge that something has changed, then I would consider that as time having stopped.

TL;DR Imo, the speed of time is dependent on the observer and the particles surrounding him.

if you go super fast in space will you still live to be 60-90 'years old' if you have no early health issues etc? Like a space station that has enough food thats going fast as hell towards Pluto and beyond

Relative to another person moving slower, but from your perspective you will age the same. Still, if we can figure out really fast methods of transportation, than you could spend a year on a super fast star-ship and come back to the earth 1000 years in the future. Maybe we have progressed enough to solve the problem you were suffering from, maybe there is no earth left when you return.

if you flew away from earth for 30 years, turned around in a decade, took 30 years and got back here, would you appear to be a normally aged 70 year old person who spent their entire life on Earth?

humans perceive time to exist just like they perceive colors, neither which exist objectively, they're just internal illusions of the mind
objectively there is no distinction between past, present and future, they are the same one thing and all that was to happen and is to happen has already happened because there is NO TIME
