How can we be sure that microwave ovens are safe? Just because microwaves aren't ionizing radiation it doesn't mean they can't promote chemical reactions.
In chemical synthesis microwaves are used regularly to speed up the rate of reactions. Is their only use to warm up the reaction mixture or do microwaves excite the molecules' vibrational (also by heating) and rotational states? Do the microwaves in this case just add up via the absorbtion in molecules into infra red waves?
Do metal ions abundant in organic matter also absorb microwaves from your oven at home? And if yes, can't they become some sort of catalytic centers for unwanted reactions?

Also could anybody explain to me how EM waves work in this context? The EM waves are always characterized by their wavelength or wavenumber, but isn't there also the amplitude of the wave to be considered?
