For my CS degree I need to complete a two course sequence, the sequence options being
Mathematical Logic and Foundations of Mathematics
Modern Algebra I and II
Numerical Analysis I and II
Optimization Methods of Operations Research and Stochastic Methods of Operations Research
Probability and Introduction to Stochastic Processes
Which two course sequence would be most helpful if I wanted to pursue Theoretical Computer Science?

Logic would be good too

Some might argue abstract algebra is useful too, I’m assuming that’s what the modern alg course is

These are all broadly useful in CS. Now that being said, the two *least* useful sequences here are optimization and stochastic methods and numerical analysis, but these are useful to have and there are exceptions.
In order of relative relevance:
>logic and foundations of math
directly useful to the foundations of CS. There's a lot of work there.
>modern algebra I and II
similarly essential. Algebra is insanely important since you need to work with some sort of structure. After this, do some category theory as a course or independent study - but wait until you finish this sequence
>probability and stochastic processes
very important in the theory of random and probabilistic algorithms, formula lower bounds, randomized complexity classes, PCP theorem, etc etc.. Indispensable. You should take a good bunch of analysis and measure theory to augment this - a good amount of research into random algorithms needs a proper treatment of probability theory.

Honestly take as many as you can, but prioritize these 3 sequences. Take as much math as you can - even complex analysis and topology. IN theoretical computer science, legitimately all of it is useful in some way, and you'll feel more comfortable in TCS as it's a math department themed by computation.

If you want any shot in theoretical computer science you need a solid understanding of all of these things.
Also, there's no such thing as "Theoretical Computer Science." It's not a proper noun.
