graphing environmental data

i think i'm posting in the right place here but please forgive me if not .

I've got 365000 lines of data from environmental sensors detecting temperature/co2/humidity etc, every minute for a week.
Each data point has a value/units/timestamp.
I need to individually graph each of these parameters and then overlay the graphs somehow to reveal if there is any correlation within the collected data.
this is likely going to mean erasing any form of units on the x axis and just having a fixed time axis on the y. As long as the graphs are overlayed the correlation will be apparent, then individual graphs can be referred to for specific measurements.
I've been unable to set the x axis to show a time period in any standard method, it keeps locking onto groups of certain specific timestamps.

Does anybody know how to do such a task in excel? or perhaps suggest a method to reduce the quantity of data?
