I have trouble speaking smoothly without 'umming' and 'urring'.

I hate it, people think I'm an idiot because of it.
Conceptually, I know what I want to say, but I struggle to find the words.

Expressing myself on the internet feels a lot better because you go straight to the point instead of "uuuuh"-ing your way through a thought and how to articulate it

Practice explaining stuff to an imaginary audience in spare moments, like driving, while in the shower etc..

Give yourself permission to take a moment to arrange your thoughts, and tell people stuff like 'let me think for a sec about how to best explain it'. People are usually quite permissive of this IME.

I think part of it is people being uncomfortable with silence.
So when they speak and need to pause they 'umm' to fill the silence.
To reduce umming, you must become more comfortable with brief silences and reduce the social anxiety associated with it.
