Domestication is probably just a sign of leisure. Ancient domestication are ultimately unknown. More recent domestications of Rats, Strawberries and (I'm guessing) almonds are because humans had a general understanding of living creatures and were able to mold them over months and years of breeding.
I've heard the waste pile hypothesis where humans just shat out seeds and they grew and did that a few times till they figured it out. Doesn't work so well for animals. You could say that explains why there are more domesticated plants then animals
