The Imperial Ship would win because of sheer numbers but the tech it represents is outright trash. The enterprise and Star fleet as a whole tech is actually ridiculously strong but their ethics holds them back. If they didn't have to worry about Romulan treaty bullshit they could utilize phase shifting cloaking and bypass defenses altogether and just blast the propulsion engines in the back.

Honestly the Enterprise could probably do it without the cloaking device since it can probably out maneuver the Imperial ship on quicker turns. Assuming it could survive being swarmed by hundreds of fighter ships.
