A question of biology really. If I had to venture a guess I'd say that cells utilize sodium because it is more available than most of the alkali groups. Also it is much more chemically stable, the lower group metals have violent reactions, which is never ideal for the precise homeostasis our bodies need to keep working

Lithium was abandoned as a salt substitute, because some people overdosed. It is still used as a medicine. Rubidium chloride used to be used as an antidepressant, but it isn't anymore, possibly because of its expense or because it might cause mania.
