this is the function of (e^x - 1) / x
we know the at x = 0 is 1, but why does desmos show this weird oscillating thing as I zoom in extremely close to where the limit is?

Yeah, you graphed it wrong, not sure what you entered.
If you want an interesting function to look at in desmos, enter y = {x < 0: x+2(x^2)sin(10/x), x=0: 0, x>0: x+2(x^2)sin(10/x)}
The function is continuous and differentiable everywhere, including x=0
