Is there any reason why you would want to learn chemistry, physics, biology etc unless they were a part of your course at uni? There's no benefit to your life from e.g. knowing the structure and function of a cell

It's all about what you want out of life. If you just wanna make money, you should learn the bare minimum necessary for your coursework and be done with it as fast as possible. If you care about the pursuit of knowledge in one field or another, you can invest your time in that for its own sake.

The thing about science is that you never know in advance whether something is gonna be useful or not. The drivers of innovation are more likely to be the intellectually curious who don't care much about usefulness, so they are willing to try unlikely things that have never been tried before. Those who care about being useful and efficient usually just stick with tried-and-true methods, because wasting time with something unusual does not guarantee a return on your investment.

Stoicism is very helpful. Beyond that I've been reading Nietzsche who isn't really helpful but is pretty interesting. Compared to Nietzsche the structure and function of cells just isn't interesting to me. Idk why but I'm more interested in the humanities than the sciences.

Idiots get frustrated when confronted with hard steps outside their ability to understand. The humanities let you pretend you know something no matter what level you're on, because everything is subjective anyway.
