They're only dangerous insofar as they cause tooth decay, can cause oral ulcers, and can become a problem if ypir immune system becomes very weak, but they won't kill you under normal circumstances. They also generally outcompete more dangerous shit just because they're optimized for the environment. So that morsel of food isn't likely to grow anything terribly harmful. It instead will be host to the stuff that's already in your mouth. Things like streptococcus, lactobacillus, and (relatively benign variants of) E. coli. Any dangerous E. coli or salmonella present on the pork before entering the mouth is unlikely to get a solid foothold, and you need to ingest an awful lot of most harmful foodborne bacteria before they actually make you sick.
