Because there are many types of sugar and each caramelizes in a slightly different manner. Other trace residuals in the sugar can also affect how it occurs.

It's been well characterized and has defined steps and intermediates. It has been the subject of enormous research since the 70s, with a large portion of that work performed at UW Madison Dept of food science. Unfortunately, modern food science is just a circle jerk of emulsions and encapsulation of random ass things for targeted "delivery"

Stan Meyers, and a number of others (who are relevant). The notion that it's a "perpetual motion machine" or "free energy" are false misframings to strip it of credibility. Check out the youtube videos I linked for the type of feedback loops that could be behind sustaining that type of behavior in water.

Unfortunately I (and everyone else) just won't know until it's replicated and somehow comes to a level of notoriety where it's accepted as self evident. There are many things I'd like to replicate.
