Drinking the milk from your wife would be weird, so you just take the milk from the cow (perhaps which you first kept as a source of meat)

It's not the quantity. Cows milk is 365 days/year while for females you have to impregnate them first.

They knew from killing calfs that's where cheese came from. It was likely that they ate cheese that was fermented in the stomach first. Milk was also not normally consumed, it was processed into cheese, yogurt and other fermented products because they didn't have modern preservation

You can milk a cow and leave it at room temperature all day. Breastmilk can sit out for like 10 hours no problem and even overnight turn it into yogurt. Don't you think with smaller villages and family farms that there was an easy local access to milk? Even when we were creating cities people were getting milk, that's when we started having problems because of less farms to people, the farmers were milking diseased cows and transportation and distribution was a problem.

Early humans couldn't digest unfermented milk. Humans used to only produce the enzymes necessary for that as infants but then we evolved to keep doing it as adults. This happened very recently in human history and 65% of the planet don't have the genes for it. In civilizations with milk producing animals the ability to consume it without fermenting first had a huge survival advantage.
