I don't think measuring trees is very motivating though. I'm thinking about calculating odds st casinos, odds for insurance companies and calculate rates, odds and false positives for sickness tests, financial stuff, does your bank offer you a good credit ir are they fucking with you, building something like a bed that must be stable,... Hell, teach them some machine learning techniques.
Piggyback other classes. Do some electronics with physics, structural analysis, analyze a motor, steer drones, play games where vector analysis is needed to hit an enemy, smallest surface largest volume packaging for something, electricity bills, how do things like a TV work,...
