A potential argument is that if the earth were round, then the person going up and down would necessarily need to travel at a faster speed at the apex of his upward motion to move at the same speed as the trampoline underneath (the difference in acceleration would then be attributed to the earth's "pull" on the cart as it traveled along the sphere)
Several issues:
1 - there is no indication that the tractor isn't adjusting its speed as the person jumps up and down
2 - the experiment lasts a whole of several seconds, which disallows "desync" to present itself even if it existed (even your car turn signal needs longer to de-sync from the car in front of you)
3 - the man being bounced might be a biased actor unlike say, a large sphere (physicists LOVE spheres)
4 - the ratio between the apex of the upward motion is practically negligible compared to the earth's radius, attributing to the "lack of time for de-sync to present itself" mentioned earlier
