Using the raw noise without post processing often has a small bias or other problematic regularities, which might be extremely small but still significant enough to break crypto.
Nevertheless Zener diode noise is still an excellent way to build a RNG. In fact the german BSI even has a proposal for such a design. Check out the paper by Killman and Schindler about "A Design for a Physical RNG
