why do we say STEM when maths, engineering and technology are already included in science ?

Engineering and technology isn't science. Math isn't science. These are all different concepts and systems that do not have the same definitions and meaning as science does.

Not Science: Everything else.

Math: Algebra, Analysis, Geometry

math does not require theory to fit observation and vice versa, it does not even require observation at all.
It is nothing more but a set of axioms defined in a way to be most useful in describing natural phenomena and logic.

science helps develop technology and engineering, but they are separate while highly intertwined along with medicine. technology is about tools, engineering and medicine are practices. math is a language that is so powerful science would be incredibly limited without it. so really we should be saying stemm.
