As a matter of fact you can more or less call that pyramid the cost pyramid instead. The truth is that bread, cereal, rice and pasta often contain plenty of fat (fried rice, artisan bread featuring shortening/butter, pasta aioli), but they're cheaper to make. People think of vegetables and fruits as "naturally occuring supplements that contain all the vitamins and minerals you need", when the truth is that it's about as complete a supplement as the meat and protein group (because it lacks, as it turns out, meat and protein).
The chart is less of a guide to healthy eating (healthy eating is 2 parts, exercise, and supplying your body with what it needs to repair itself after damage during exercise without overdosing, often in ratios unrelated to this pyramid setup) and more of a way to cheaply feed people. Consider this as for "raw evidence" as to why this chart is misguided at best - salt isn't even mentioned on the chart.
