Their internals would be made of something tougher than carbon, composites perhaps, but those "organisms" would likely share more in common with robots than our common view of life, even if they did evolve 'naturally' on their home world. In fact, there are some pretty horrific documented cases of stars in far away solar systems just 'poofing' out of existence. Nobody knows what happened to them, it just looks like one day they were and the next...
