Panaretos - Statistics for Mathematicians

Gives a good outline of all the most important things you would find in an introductory statistics course ie. manipulating density functions, cramer-rato bound, null hypothesis rejection, p-value, confidence intervals. All the while being clear about the reasons things are done this way and not skipping the proofs.
Though you should know a bit about probabilities, the most important points are resumed at the end of the book.
