It's understandable if you only know about it from headlines. New technology makes more oil available to us, but if you don't know that it seems like more and more is discovered before we hit the next peak oil prediction. It's similar to people who refute climate change by citing every sensationalist prediction.

Also there's the abiotic oil hypothesis, but I wouldn't be surprised to find out that originated entirely from the oil industry to try to keep people depending on oil until they find something even more profitable.

IIRC it came from a dipshit physicist who later conned some investors into drilling a crater and claimed that his drilling mud containing hydrocarbons was proof.

Probably some gravitational swap. Like the surface under the core would be squished against it, nearby oceans will fall onto the core, and the whole planet will just mix up.

I once read a theory that the Earth's oceans were created because water leaked out of giant holes in the crust.

Well I mean, the problem might be that the decline is too fast for us to adapt. For example, our agricultural system only works because of oil. We do have alternatives, but they require time and huge amounts of effort, education and capital to implement.
Maybe "end of civilization" is hyperbolic, but I can definitely see there being a possibility that it'll go very very badly.

Yeah, looks like the current oceans were formed from melted silicates, so there are probably a lot of unreleased water in the depths. What caused the abundance melted silicates tho.

We can only directly see that if anything comes from under the earth it is the magma which is basically melted rock. Also they dug deep and all they saw was rock. So they just assumed that there is only melted rock inside the Earth and that at highest temperature and pressure the metals should separate even from oxygen and silicon and just fuse into one giant metal ball. Also something must be responsible for the Earth's magnetic field. It's a hard question.

Seismology. You measure the origin of earthquake waves and check when and where they surface again after going through the planet. Then you calculate backwards to see what densities would cause the seismic wave patterns we see. Look up PREM, the preliminary reference earth model.
